The tea is grown by producer Bach Shan Tea in Ha Giang province in northern Vietnam. The tea plantation sits over 1400m above sea level and proudly houses their century-old tea trees. The plantation adheres to the principles of biodiversity, In this way, the tea trees benefit from the contribution of a natural environment and the use of pesticides becomes unnecessary. Shan Tuyet is the oldest variety of tea. Of impressive natural beauty, the tree can reach 15m in height, it is characterized by an unusually thick trunk and is generally covered with white moss. The tree has large, long leaves that are deep green in color. It is also its appearance that inspired its name Shan Tuyet, which means snowy mountain.
The tea leaves are carefully picked by hand, which requires considerable effort as it requires climbing high trees. The leaves are then slowly roasted in an oven to lock in the naturally fresh and invigorating aroma of the tea. Then, the leaves are spread on large round bamboo trays to be rested for about 12 hours in a cool room and then in the sun. The purpose of this process is to reduce both the moisture and the tannin content of the tea leaves, prevent oxidation and preserve freshness. The tea leaves pass through a rolling machine to give their final shape before undergoing another final drying cycle.
The final taste of Shan Tuyet tea reflects a slightly minty spring breeze with the sweet floral notes.
Recipe:
Pour 200ml of hot water at +-80°C (2 minutes after boiling) into a cup containing 4 grams of tea and leave to infuse for 2 minutes. Enjoy!
