The Eratoi group, led by Simao Pedro de Deus, consists of 25 smallholder farmers with a rich coffee-growing heritage. They meticulously process the ripest cherries, fermenting them for 40-42 hours and drying them until they reach the perfect moisture level. Their cohesive approach consistently produces flavorful coffee with a bold taste and subtle sweetness.

Today, Timorese coffee farmers strive to establish their presence in the global specialty coffee market. They grow coffee organically under shade trees, following traditional methods passed down through generations. This sustainable approach supports local families and communities, providing them with a consistent income. The East Timorese deeply respect their land and only use organic fertilizers like cherry skin, foliage compost, and animal manure, nourishing the soil during the wet season.
