Three generations in the Western Ghats

This Hydro Honey lot comes from Ratnagiri Estate, a family farm in Chikmagalur, southern India, set inside a tiger reserve. Run by Ashok and Divya Patre, the estate has spent the last decade turning to specialty coffee and careful, experimental processing.

Ashok and Divya Patre, Ratnagiri Estate
Producer

A family estate since 1927

In 1927, Patre K Shivappaiya acquired a piece of land that was still mostly jungle and planted its first coffee trees. The first harvest came in 1934. His grandson Ashok Patre took over in 1989 and replanted the whole estate. Today he runs it with Divya Patre, who leads the harvest and trains the picking teams.

Origin & Farm

108 hectares among the silver oaks

Ratnagiri sits at 1,350 metres in Chikmagalur, inside a tiger reserve where coffee grows alongside wildlife. According to the family, the estate is named after the silver oaks that grow across the land and shade the coffee. Since 2015, it has moved from commercial coffee to specialty, and now grows almost exclusively for specialty.

Hydro Honey processing at Ratnagiri Estate
Process

Hydro Honey, dried twice

A newer hybrid process borrowing from natural, washed and honey methods. Whole cherries first dry partially on shaded raised beds, then rehydrate in water tanks before depulping. This controlled hydrolysis phase refines how the mucilage breaks down, for more clarity, sweetness and structure in the cup. The parchment then dries for 31 days on raised beds with most of its mucilage still attached. Each lot is cleaned by optical colour sorters and shipped vacuum-packed.

Cup Profile

Sweet, silky and tea-like

Expect warm baking spices and a vanilla-like sweetness, lifted by soft pomelo citrus and carried by a black tea character: light body, silky texture and a gentle bitterness on the finish. A delicate, layered cup that shows another side of Indian coffee.

Cup profile: vanilla, pomelo, black tea
Why we love it

“A family estate that never stops experimenting, and a rare chance to taste how far Indian specialty coffee has come.”
