ORIGIN & FARM: Nestled in the Nujiang Dry-Hot Valley of Baoshan, Zuoyuan Coffee Manor grows on the volcanic southern slopes of the Gaoligong Mountains, between 1,100 and 1,800 meters. This unique environment, warm days, cool nights, and mineral-rich soils, creates ideal conditions for vibrant, aromatic coffees.
Founded by the Fan family, Zuoyuan quickly became a pioneer of Yunnan specialty coffee and the first estate to cultivate Geisha at scale. Recognized as a Yunnan Boutique Coffee Plantation, the manor has evolved into a benchmark of innovation, quality, and experimental processing in the region.
PROCESS: Behind this lot is Dao Dao, the Shanghai-based roaster and founder of Small Arms Big Heart. Since 2017, his team has been exploring how fermentation shapes flavor, working closely with farmers across Yunnan. Their approach blends scientific curiosity with a playful, hands-on spirit, always pushing for deeper expression and complexity in the cup.
Inspired by a producer using wine barrels, Dao Dao began experimenting with barrels sourced from the wine region of Ningxia. Unlike sealed tanks, these barrels create a natural dual environment: cherries on the surface oxidize, while those at the core ferment anaerobically.
This combination produces a striking interplay of acetic brightness and lactic softness, enriched by subtle wine-like nuances, an approach that results in a cup with exceptional depth and personality.

We strive to provide coffee that’s both fresh and properly rested, so it’s ready to enjoy as soon as it arrives. Typically, the coffee we ship is between 1 to 15 days old. If you love ultra-fresh beans, just mention it in the order notes at checkout. Our coffee reaches peak flavor between 1 to 8 weeks after roasting, but when vacuum-sealed or frozen, it can stay delicious for 5-6 months or longer.
