Vietnam, known for its robusta coffee, is undergoing a transformation in its coffee industry. Robusta, once considered cheap and mainly used in inexpensive espresso blends, now plays a more significant role in Vietnamese coffee culture.
Mr TOI: He’s a farmer from Bao Loc in southern Vietnam, is a part of this change. His farm, Future Coffee Farm, nestled in a hidden valley, cultivates coffee cherries for his unique washed anaerobic Canephora (fine robusta). This variety undergoes a complex anaerobic processing in climate-controlled containers, resulting in a sweet and aromatic flavor profile reminiscent of creamy nougat and sweet dried jujube. Mr. Toi envisions his farm as a hub for cultural and professional exchange, with plans to establish a coffee roasters’ training center near a small waterfall on the property.
PROCESS: Coffee cherries are carefully handpicked and selected before undergoing the washing process. First, they are de-pulped, then fermented in tanks for 24 hours and thoroughly washed. The beans are then dried for seven to ten days, being regularly moved for even drying. Afterward, they are meticulously hand-sorted to separate peaberry beans. Finally, the coffee is stored in GrainPro bags to preserve its quality.
PEABERRIES: Is a rare and unique natural mutation of coffee beans shaped like tiny peas, stand out for their distinct flavor profile and occasional brighter acidity, as their singular development within the coffee cherry concentrates flavors and intensifies the coffee-drinking experience.

We strive to provide coffee that’s both fresh and properly rested, so it’s ready to enjoy as soon as it arrives. Typically, the coffee we ship is between 1 to 15 days old. If you love ultra-fresh beans, just mention it in the order notes at checkout. Our coffee reaches peak flavor between 1 to 6 weeks after roasting, but when vacuum-sealed or frozen, it can stay delicious for 3 months or longer.
