PRODUCER: For the past seven years, Marián, a Slovakian coffee lover, and Lim, a farmer of the K’Ho ethnic minority, have been working side by side under the shadow of Langbiang Mountain in Lạc Dương, Đà Lạt. Through their project, Zanya Coffee, they have united local families and smallholder farmers around a shared goal: producing exceptional specialty coffee while strengthening their community.
By combining traditional knowledge with modern processing techniques, Zanya Coffee showcases the unique terroir of the Langbiang highlands. Beyond cup quality, their mission is deeply social: to create fair opportunities, preserve cultural identity, and build a sustainable future for the K’Ho people and their land.
PROCESS: Double washed (or double fermentation) is a processing method used mainly in East Africa to achieve exceptional clarity, brightness, and cleanliness in the cup. It involves two stages of water fermentation, with the second stage known as “soaking.”

The beans are pressed from the cherry, then left to ferment for about 36 hours before being thoroughly washed.

After cleaning, they are soaked in fresh water for 24 hours — the step that gives the method its “double washed” name.

Finally, the beans are dried in the sun and drying houses for around two weeks, depending on the weather.

We strive to provide coffee that’s both fresh and properly rested, so it’s ready to enjoy as soon as it arrives. Typically, the coffee we ship is between 1 to 15 days old. If you love ultra-fresh beans, just mention it in the order notes at checkout. Our coffee reaches peak flavor between 1 to 8 weeks after roasting, but when vacuum-sealed or frozen, it can stay delicious for 5-6 months or longer.
