Vietnam, known for its robusta coffee, is undergoing a transformation in its coffee industry. Robusta, once considered cheap and mainly used in inexpensive espresso blends, now plays a more significant role in Vietnamese coffee culture.
Mr. Toi, a farmer from Bao Loc in southern Vietnam, is a part of this change. His farm, Future Coffee Farm, nestled in a hidden valley, cultivates coffee cherries for his unique Winey Natural Canephora (fine robusta). This variety undergoes a complex anaerobic processing in climate-controlled containers, resulting in a sweet and aromatic flavor profile reminiscent of wine gum and vanilla cream. Mr. Toi envisions his farm as a hub for cultural and professional exchange, with plans to establish a coffee roasters’ training center near a small waterfall on the property.
The processing of the cherries involves hand-picking, fermentation in stainless steel tanks for over 70 hours, and a specialized drying process for about 20 days. The dried coffee is meticulously sorted and stored in Grain Pro bags.
